u3a members will be meeting and eating together on 1 June 2022 to celebrate the 40th Anniversary and the Queen's Jubilee with picnics in the park across the UK.
To give members some inspiration, Alex from Vegetarian for Life will be hosting an event with us on 16 May talking through popular picnic recipes.
He says, "It is a real pleasure to take part in u3a's 40th birthday celebrations. In the lead up to Picnic in the Park I will be demonstrating how to make some tasty picnic treats, perfect for an alfresco celebration. Happy Birthday u3a!"
To whet your appetite, find one of the recipes Alex will be demonstrating, a pasta salad, below.
Pasta Salad
Ingredients
45g/1 1/2 oz penne or fusilli (cooked potato or rice are suitable alternatives)
1/2 tbsp mayonnaise* (vegan mayonnaise is available)
1/4 finely chopped onion
1 stick celery – finely chopped
1 small chopped tomato
Chopped watercress or mixed fresh herbs
1/4 chopped red pepper
Instructions
Cook the pasta according to instructions.
Add the onion to the mayonnaise and mix this into the pasta with the remaining ingredients.
Season with celery, salt, pepper and lovage leaves (optional).
